How to store a sourdough starter: counter, fridge, and back again
Storage is the decision that sets your whole routine, and it comes down to one question: how often do you actually bake? Not how often you intend to — how often you do.
Counter storage
Suits anyone baking once a week or more. The culture stays warm, active and ready. You feed once or twice a day depending on how fast it peaks, and it is usable whenever you want it without notice.
The cost is the daily commitment and the discard that comes with it. The benefit is that a counter starter is at its strongest, which shows in the rise you get from a loaf.
Where on the counter matters. A spot by a window in winter and a shelf near the oven in summer are different environments, and the difference is not small — fermentation speed tracks temperature closely. Reading the number off the jar tells you which one you have, and therefore whether a slow morning is a cold morning or something else.
Fridge storage
Suits occasional baking — once two weeks, once a month, whenever the mood strikes. Cold slows the culture dramatically, so it feeds weekly instead of daily and the discard drops accordingly.
A fridge starter separates, darkens on top and generally looks neglected. That is normal. The dark liquid is hooch, which means it has used up its food; pour it off before feeding.
Keep less in the jar for fridge storage. The rise is gentle, so headroom matters less, and a smaller volume means less to discard each week. 100 to 150 ml is plenty.

Waking a fridge starter
This is where people get caught out. A starter straight from the fridge will not raise a loaf, and using it cold is the most common cause of a dense, disappointing bake.
The routine takes about a day and a half:
Take it out and let it come to room temperature for an hour or two. Pour off any hooch.
Feed it, and watch what it does. The first feed after the cold usually gives a modest rise — maybe a half. That is not a problem, it is the culture waking up. Mark the level so you can actually see how far it went, because "it rose a bit" is not information you can act on.
Feed it again 8 to 12 hours later. This one should double. If it does, you are ready. If it only manages a half again, give it a third feed — a starter that has been cold for a month takes longer than one that was cold for a week.
That second reading is the whole test, and it is why a graduated jar earns its place here more than anywhere else: the difference between a half-rise and a double is the difference between a good loaf and a brick, and by eye those two look far more similar than they should.
What the fridge actually does to the culture
It is worth knowing why cold storage works, because it explains most of the odd things a fridge starter does.
Cold does not kill the culture — it slows it. The yeast goes largely dormant, but the lactic acid bacteria keep ticking over at a reduced rate, which is why a fridge starter gets progressively more sour the longer it sits. That acidity is also what protects it: a low pH is hostile to almost everything except the organisms you want, which is why a starter left for weeks is usually fine while a bowl of flour and water left for three days is not.
The practical consequence is that the two halves of the culture wake at different speeds. The bacteria are ready almost immediately; the yeast, which is what actually lifts your loaf, takes a couple of feeds to catch up. That is precisely why the first feed after the fridge gives a modest rise and the second gives a proper one — and why baking after only the first is the classic disappointment.
Covering it for storage
Same rule in both places: the lid rests, it does not seal. Fermentation continues in the fridge, slowly, and it still produces gas that needs somewhere to go.
In the fridge the wooden lid is the better choice — a cloth cover lets the surface dry out and pick up whatever else is in there. On the counter, either works, and the cloth is the one to reach for when the culture is at its most vigorous and needs maximum airflow.
How long can it go unfed?
Longer than most people expect. A fridge starter left for a month will look dreadful — dark liquid, gray surface, sour smell — and will almost always come back with two or three feeds.
Even several months is often survivable. The culture is dormant rather than dead, and it is remarkably robust. The only genuine write-off is visible mold: pink, orange or fuzzy growth means discard and start again. Everything else is recoverable.
Switching between the two
You can move a starter back and forth freely, and plenty of people do — counter during a baking stretch, fridge when life gets busy.
Going counter to fridge: feed it, let it start rising, then put it in. It goes to sleep with a full stomach rather than an empty one.

Keep the jar the same either way. What changes is the interval, not the equipment — and keeping the same container means your recorded peak times stay comparable.
